Almond barfi is prepared with numerous styles but almond barfi prepared with almond and sugar taste more scrumptious and different than almond barfi prepared with mawa and condensed milk. This barfi has longer shelf life.
Ingredients for Almond Meal Barfi
- Almond - 1 cup (150 grams)
- Sugar powder - 1 cup (150 grams)
- Ghee - 2 tbsp
- Milk - 1/2 cup
- Saffron - 10-12 (threads)
How to make Almond Burfi from Almond Meal
Take 2 cups water in a vessel and allow it to simmer. Turn off the flame and place boiled water into it. Cover and soak them for 5 minutes.Mix saffron in milk and keep it aside.
After 5 minutes, take out almonds from water and place them in cold water. Remove the skin of almonds, method for peeling the almonds can be seen in video. Now again keep all almonds in hot water for 1-1.5 hours and cover the vessel.
When almonds get puffy, take them out in water and place them in mixture grinder. Also add saffron milk and add 1-2 tbsp (if required).
Add 2 tsp ghee in non stick pan and allow it to melt. Add almond paste and powdered sugar into it and stir constantly. Cook until it gets thick and dense in consistency.
When mixture gets thick, take it out in a plate and allow it to cool. When mixture gets bit frigid, grease your hands with some ghee and on the mixture. Knead the mixture until smooth.
Take mixture in hand and make one dough ball. Place it over butter paper. Press with hand and flatten. Now with help of rolling pin, press gently and roll into 1/3 cm thin and square sheet. Keep it as it for 10-15 minutes to set.
Mixture is set, now with help of pizza cutter or scale cut into pieces with any shape or size as per your preference. Place the pieces in a plate. Almonds barfi is ready, serve and relish eating.
Suggestion:
- If almond barfi is not cooked sufficiently then barfi remains wet and it gets difficult to set the barfi. If this happens, then cook the mixture again on low flame until it gets thick and dense in consistency. Now roll the mixture again. Almond barfi will set aptly.
