Laapsi Recipe - Rajasthani Laapsi recipe


Lapsi is a traditional dish of Rajasthan and Gujarat prepared with porridge (broken wheat). Lapsi is often prepared for some special occasions or for rituals (puja). This dish is really delectable to eat.

Ingredients for Laapsi

  • Porridge - 1 cup 
  • Sugar - 3/4 cup
  • Ghee - 1/2 cup
  • Raisins - 2 tbsp
  • Cashews - 2 tbsp
  • Green cardamom - 5-6

How To Make Laapsi

Preheat a pressure cooker over flame. Add ghee into it. When ghee melts, add porridge and stir constantly. Cook until it gets slightly brown in color.
After roasting porridge add 3.5 cup water of and close the pressure cooker with lid. After one simmer, turn of the flame. After all steam escapes, open the lid.



Cut cashews in small pieces and peel cardamom to make powder. Add sugar in porridge and mix well. Now add chopped cashews, raisins, cardamom powder and ghee into it and mix all ingredients really well. Cook lapsi until sugar dissolves completely.
Lapsi is now ready, turn off the flame. Take out lapsi in a bowl and garnish with some cashews. Tantalizing lapsi is ready, serve and relish eating.
Suggestions:
  • For making lapsi, quantity of dry fruits can be increased or decreased as per your taste. Skip the use of ones you don't like eating and increase the quantity of dry fruits you love eating.
  • Quantity of sugar can be increased or decreased as per your taste. 
  • Lapsi can be prepared with jaggery as well.
